Emulsification is a process that produces an emulsion. An emulsion is a liquid that contains additions of another liquid in the form of minuscule, very fine droplets. Emulsification facilitates the chemical process between substances that are immiscible under normal circumstances. In most cases, it refers to the mixing of an oil-based liquid and a water-based liquid. In some cases, the help of another substance (an emulsifier) is needed. In the preparation of mayonnaise, for example, egg yolk and mustard act as the emulsifiers between oil and water (vinegar).
